Recipe For A Lazy Runner : Fried Rice

What do you do with leftover rice from a sushi-takeout meal? Turn it into home-made fried rice – a quick-to-make, fail-proof recipe for a lazy runner like me.

The local sushi restaurant always gives us two portions of white rice to go with our sushi takeout. It is a waste to throw them away. One way to make good use of the rice would be to stir fry a couple of dishes to eat with the rice. It is, however, not a suitable approach for me. I am lazy and does not have the attributes of a good cook. Making a couple of dishes takes me too much time, and the results are not guaranteed.

Turning the white rice into fried rice is the solution. I have always been told that fried rice tastes better when days-old white rice is used (no idea why). As such, I can let the rice sit in the refrigerator for a few more days before the mood strikes me to make fried rice. Moreover, fried rice is a dish that can be made from the ingredients I usually already have at home (no extra shopping required!). In addition, this carbohydrates-laden dish is a good recovery food. It recharges quickly the glycogen-depleted body after a run. Last but not least, my husband enjoys the meal as much as I do.

Recipe ? Not really. I make the dish based on my recollection of my mum’s homemade fried rice. In the “recipe” below, you will notice that not many details are given on the portion size for each ingredient nor the time needed for each step. The whole cooking process is based on a “trial-and-error” process. Add the condiments and cook until you get the taste you like!

Ingredients

  • Shrimps (I always use frozen ones)
  • Green peas (I always use frozen ones)
  • Eggs
  • Onions, Vegetable oil, Sesame oil, Light soya sauce, sugar and salt

Steps

  • Beat the eggs and fry them. Shred them into small pieces. Put aside.
  • Fry the diced onions for a few minutes with vegetable oil , until the onions are relatively soft.
  • Add the shrimps and green beans to the fried onions. Stir fry for a few minutes. (Make sure that the shrimps are well cooked if you are not using frozen ones like me).
  • Add the rice. Mix well with the cooked ingredients. Gradually add a couple of spoonfuls of sesame oil and light soya sauce…until you reach the taste that pleases you. I usually sprinkle a bit of sugar and salt too.
  • Add the shredded fried eggs and gently toss them with the rest.
  • Serve it warm.
